How do I select which contracts are to be used for familiarity for a given Deal Type? 

Any contract marked as Signed is automatically added to your organisation's familiarity pool of contracts for the deal type.

You can mark a contract as ‘Signed’ from the contract view or from the negotiations dashboard.
